Portobello Mushroom Burgers

Meatless Monday is an easy way to incorporate more vegetables into your weekly menu and ensure you are getting a wide variety of micro-nutrients. Enter a star favorite; Mushrooms. Mushrooms are a special food, providing a plethora of health benefits that have accompanied mankind for many years. Some of my favorites include; maitaike, shiitake, portobello, crimini, reishi and king trumpets. From immune support to lowering the affects of daily stress, I highly recommend incorporating mushrooms into your meal plan. 

Mushroom burgers - a quick and easy 15 minute meatless Monday meal that even your fellow mushroom despisers will love (fingers crossed - I have converted a few). 

Portobello Mushroom Burgers

Feeds 2-4

Ingredients:

  • 4-6 Portobello Mushrooms (cleaned and stemmed), I typically eat one mushroom but my partner enjoys 2, so keep that in mind. 
  • 2 tablespoons tamari or coconut amino's
  • 1/2 tsp toasted sesame oil
  • 2 cloves garlic, finely chopped
  • 1 tsp dijon mustard
  • 1 tsp sea salt
  • 1 head butter leaf lettuce
  • 1/2 red onion, thinly sliced
  • 1 avocado, pitted, and cut into slices
  • 2 tablespoons homemade or avocado oil mayonnaise
  • optional accompaniments: tomato, dijon mustard, pickles, sprouts, Sriracha, vegan cheese or raw cheddar slices.

Instructions:

  1. In a large bowl, add your mushroom caps and the tamari/coconut aminos, salt, dijon mustard, avocado oil, garlic and let marinate in the fridge for up to 2 hours. If you don’t have the 2 hours, its okay, a few minutes will still do the trick.

  2. Prepare the lettuce by rinsing one leaf at a time and pat dry. We will keep these whole and will serve as our buns for the burgers.

  3. Preheat a cast iron, non-stick skillet or grill over medium heat. Place your caps top side up and sear for 5-7 minutes each side. Depending on the thickness of the mushroom you may need to cook a little longer.

  4. Assembly, layer one piece of lettuce onto the plate, add your mushroom party and top with desired toppings; red onion, avocado, tomato, pickles, sprouts.
