Summer Soba Noodle Salad

Who loves a cold soba noodle salad with fresh herbs, shredded veggies and a creamy peanut sauce to accompany a lovely summer day? There is something so satisfying about the medley of fresh herbs, crunchy vegetables and a tangy peanut sauce that gets my taste buds uber excited. For the noodles, I used organic 100% buckwheat soba, but feel free to utilize brown rice noodles, zucchini noodles, kelp noodles or shirataki noodles. All are equally to be enjoyed amongst this combo. 

Serve as a side dish, or top with some grilled salmon or shrimp to make it a Protein-Fat-Fiber meal. 

Summer Soba Noodle Salad 

Serves 4 as a Meal, 6-8 as a side salad

Ingredients

  • 1 large cucumber, washed and cut into thin matchsticks or coins
  • 1/2 red cabbage, washed and shredded (Use a mandolin for ease)
  • 2 cups shredded carrots (about 2 large carrots)
  • 1 large red bell pepper, washed and cut into bite size pieces
  • 4 green onions (white and green parts), chopped 
  • 1/2 red onion, finely sliced or chopped 
  • small bunch of mint, cilantro and basil, chopped
  • 1 package of 100% buckwheat soba noodles, cooked according to package and rinsed with cold water.
  • Toppings: Avocado, Gomasio, Sriracha, Grilled Salmon, Shrimp, Chicken or Cauliflower or Tofu for a veggie option

Dressing Ingredients: 

  • 1/4 cup warm filtered water
  • 1/4 cup creamy peanut butter plus 2 tablespoons
  • 2 tablespoons rice vinegar
  • 2 tablespoons lime juice
  • 2 teaspoons minced fresh ginger
  • 1 garlic clove
  • 1 teaspoon tamari or soy sauce 
  • 1 teaspoon maple syrup or a drop or two of liquid stevia
  • optional: Sriracha for added heat

Instructions:

1. Combine all dressing ingredients into a high-speed blender and mix until a smooth texture forms. Adding more water to thin if needed. Taste for additional lime, peanut butter, ginger, spice.

2. Layer salad ingredients into a large bowl, combine with noodles and drizzle with dressing. Serve with added protein or as a side salad.
